It is an ancient type of wheat, as the Romans used it, as well as the citizens of the Middle East. In the XII century, a modest nun from Bingen chose spelt as her favourite wheat and food. Her name was Hildegarda, she was a visionary and a healer. She created an entire diet based on spelt. Her wisdom and knowledge is used to this day. In our time, the farmers cultivate organic spelt without the use of chemical agrichemicals.
