History of Beetroot
Known to men for thousands of years, it was found in Saqqara pyramid at Thebes, Egypt, (from the time of Third Dynasty- around three thousand years before Christ). Further, there are mentions of beetroot in the ancient Assyrian texts which picture the vegetable growing in the Hanging Gardens of Babylon (800 BC). Ancient Greeks also cultivated it around 300 BC. However, the beautiful Greeks used only the leaves of it, and threw away the healthy roots. It was even offered by them to Apollo, the Sun God, in the temple of Delphi, Greece.
Famous Hippocrates used leaves of beetroot for dressing wounds. Romans used it to cure fever, and as of today, we know of an at least one cook book, written by a famous ancient Roman- Apicius (“The art of cooking”), which included the recipes of dishes made of beetroot! like salads and broths.
Moreover, the interesting fact is, that the beetroot of those times looked differently, than the vegetable we are used to today, as it looked like a carrot :).

Nowadays, when food is so much more than just a means to satisfy hunger, we look at this vegetable with a raw lust type of intensity.

How to prepare the raw beetroot juice
As with the vegetable and fruit juices, the freshly squeezed ones are the better. They contain the highest amounts of nutrients, vitamins. But here, we do something differently.
- If you are able to buy the organic beetroot roots, simply wash them and squeeze them in a juicer.
- If the roots you buy come from an uknown source, are not organic, you can still use it. In this situation, immerse them for 15-20 minutes in salt water (salt water preparation: take 1 tablespoon of salt per 1 liter of water).
The salt water helps neutralize harmful chemical substances used during the vegetables and fruits cultivation.
How we drink it, to achieve the greatest health benefits
Drink beetroot juice alone or in combination with honey (which strengthens its properties). Add 1 teaspoon of honey per 30-50 ml of juice. You can also add apple or carrot juice, or both (adding these juices strengthens the final health benefits).
